Chia Pudding

Yield: 2 1/2 cups, 4 to 6 servings

A creamy, dreamy snack or dessert, Chia Pudding is filled with protein, calcium, and antioxidants.

1/4 cup chia seeds

1 cup almond milk (homemade is superior, you can find the recipe here)

1 cup water

1/2 cup cashews, soaked in water for 4 hours, drained, and rinsed

4 pitted medjool dates

1 tablespoon coconut oil or coconut butter (optional)

2 teaspoons vanilla extract

1/8 teaspoon ground cinnamon 

Pinch salt

Put the chia seeds in a medium bowl.

Put the almond milk, water, cashews, dates, optional coconut oil, vanilla extract, cinnamon, and salt in a blender and process until smooth.

Pour the almond milk mixture over the chia seeds, stirring gently with a whisk.

Continue to stir every five minutes for 15 minutes to allow chia seeds to incorporate and thicken the pudding. Put the bowl in the refrigerator and chill for at least one hour.
