When eating a whole foods, plant-based diet that is low in salt, oil and sugar, we find that dressings and sauces really kick up the of flavor of our beloved veggies. Homemade dressings really are the best. You know exactly what you’re getting. They are generally easy to whip together and with a few ingredients, you’ve got yourself a delightful, fresh way to dress your salad or toss freshly steamed or roasted vegetables. This dressing was inspired by Chad Sarno, one of the instructors in the Forks Over Knives class I took at the Rouxbe Online Culinary School.
Miso Dressing a l’orange
Ingredients:
Juice of one orange
1 tablespoon white miso
1 tablespoon tahini
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
Optional: 1 teaspoon of one of the following:
fresh cilantro, basil or tarragon chopped fine or 1/2 teaspoon dried herbs de provence
Place all ingredients in a clean 4 oz. jar and whisk together or cover with lid and shake vigorously . Refrigerate for up to one week.
